The first thing that popped into my head when I read your question was, "Give me liberty or give me death."

I looked up that quote and chose this site:

It’s a speech made by Patrick Henry on March 23, 1775. The last seven words in this speech are "give me liberty or give me death!"

I took the time to read the entire speech — very rousing… Sounds like what you are looking for, based on your question indicating "good serious quote about freedom."
